Veggie Omelette - Metabolic Balance

Although not an option for everyone, eggs can make for a very filling lunch or dinner on my Metabolic Balance Plan. If you can have a couple of eggs once in a while, a little veggie omelette (alongside some rye bread) will keep you going, I promise! (But remember, if you are on the Metabolic Balance Program, eggs are not an option for breakfast!)

Ingredients:
  • Grated zucchini and carrots (within your vegetable allowance per meal ~ i.e. max. 125gr. Ideally you would be using approx. 50 gr. and use the rest gr. for some side veggies!)

  • 2 whole eggs (protein portion)

  • 1 TBSP of coconut oil (you will need to be in Phase 3 for this recipe)

Method:

  • Grate zucchini and carrots finely, so it is easy to cook them in little oil.

  • Sauté the grated veggies in the allowed oil, until browned.

  • While they brown, whip the 2 eggs.

  • Add the eggs to the browned veggies and let simmer until done.

  • Enjoy with some rye bread and a side salad made with the remaining vegetables!
