Although not an option for everyone, eggs can make for a very filling lunch or dinner on my Metabolic Balance Plan. If you can have a couple of eggs once in a while, a little veggie omelette (alongside some rye bread) will keep you going, I promise! (But remember, if you are on the Metabolic Balance Program, eggs are not an option for breakfast!)
Grated zucchini and carrots (within your vegetable allowance per meal ~ i.e. max. 125gr. Ideally you would be using approx. 50 gr. and use the rest gr. for some side veggies!)
2 whole eggs (protein portion)
1 TBSP of coconut oil (you will need to be in Phase 3 for this recipe)
Grate zucchini and carrots finely, so it is easy to cook them in little oil.
Sauté the grated veggies in the allowed oil, until browned.
While they brown, whip the 2 eggs.
Add the eggs to the browned veggies and let simmer until done.
Enjoy with some rye bread and a side salad made with the remaining vegetables!
